2019 was another hot dry year. Yields were low. With the hot conditions the Riesling skins developed more colour then normally and this can be seen in the resulting wine. The old vines at Lake View only had a tiny crop so this wine is a 50/50 blend of Lake View and Upton Run.
The grapes were destemmed and crushed gently with open rollers prior to fermentation to minimise phenolic extraction to help create a more delicate wine. Old world juice handling techniques including fermentation on solids were employed to add texture and complexity. This wine was fermented in large oak cask between 18-20° Celsius. The wine was kept on yeast lees for about 12 weeks to build body and texture into the wine. We chose to wild ferment this wine to add greater complexity and funk.
