Mother nature gave us a large crop of Sangiovese this year. Given the cool conditions of the 2021 vintage, we had to wait until the very last day of harvest to pick these grapes; traditionally Rosé is one of the first to be harvested. The cooler weather allowed the fruit to ripen gradually, resulting in intense aromas and flavours.
The fruit was harvested using a selective processor and pressed off straight away, with minimal skin contact to produce a lighter coloured Rosé wine. The wine was fermented using cultured yeast and in stainless steel tanks to enhance vibrant citrus and fruity flavours and aromas. A dash of Riesling was added to the final blend to add a touch of spice
