Single Vineyard, Strathbogie Ranges. Typically we harvest the Pinot Noir grapes for this non-vintage sparkling wine in February each year. However, regardless of the vintage we always pick the fruit during the cool of the night to ensure low fruit temperature to preserve primary fruit flavours.
This wine was fermented at 15˚C in stainless steel tanks to preserve primary fruit flavours. Pinot Noir, a traditional grape of Champagne is used in this wine, however we employ the methods used to make Prosecco to create a fresher style of sparkling wine that really shows off the bright fruit flavours of this wonderful varietal.
