Layered aromas of citrus blossom, lemon, lime, lychee and musk.
Varietally intense with crunchy acidity and textured minerality to finish.
The fruit for this wine was harvested during the evening in early March. Harvesting overnight ensures the fruit remains at a low temperature, retaining primary fruit flavours. The wine was fermented between 11-12˚C. The yeast strain we used is called 'Active 7', which is isolated from German Riesling must and produces a true-to-varietal, clean Riesling.
