Farm to Table
This wine is pale gold with a slight green tinge. On the nose are aromas of stone fruit and lime. The palate is light and fresh with notes of citrus and white peach.
The fruit for this wine was harvested on the 31 March, 2017. This wine was fermented at 13° Celsius in stainless steel using a combination of two yeasts to bring out the primary flavours of the fruit. To add complexity, we chose to mature 20% of the harvest in new French oak for four months.
