Farm to Table
This wine is a vibrant cherry red in colour. Rich aromas of strawberry, cherry and spicy oak show through on the nose. The palate is young and bright with notes of lovely fresh fruit.
The fruit for this wine was harvested from three premium vineyards, all in elevated cool climate sites within an hour of the winery. Each vineyard matures at a slightly different time providing an element of complexity in this blend. This wine was fermented between 20-30º Celsius using wild yeasts to enhance complexity and texture. This wine was matured was six months using French oak (75% new).
Matches perfectly to with pork and rabbit rillette.
