This fruit was harvested using a selective processor in mid-March 2021, from the HA block at our Bilis vineyard in the Strathbogie Ranges. The fruit was cold soaked for four days, then the juice was fermented in stainless steel, using wild yeast, which provides complexity and texture. The wine was matured for 12 months in predominantly older French Oak 500L puncheons.
