Fresh strawberry, red cherry and forest fruits, layered with some earthy mushroom and spice notes.
Medium bodied with excellent fruit structure and balanced oak, fine grained, dusty tannins and great length.
2021 was a rare vintage where we had the unusual combination of higher yields and excellent quality and flavour. The cooler vintage provided outstanding conditions for Pinot Noir, which sometimes struggles in the heat allowing a gradual ripening and great flavour intensity in the fruit.
This fruit was harvested using a selective processor in mid-March 2021, from the HA block at our Billis vineyard in the Strathbogie Ranges. The fruit was cold soaked for four days, then the juice was fermented in stainless steel, using wild yeast which provides complexity and texture. The wine was matured for 12 months in predominantly older French Oak 500L puncheons.
