The fruit was picked using a selective harvester on an early morning in mid March 2021. Some of the grapes were gently crushed while some were retained as whole berries, then left on skins for 9 days. The juice was fermented with wild yeast for added complexity and texture. The wine spent 18 months maturing old French and American oak puncheons (500L).
