2020 was a warm vintage with low yields. These harvest conditions meant that our Cabernet Sauvignon fruit quality was excellent with intense varietal flavours.
The fruit, from our Billi’s Vineyard, Block G, was harvested using a selective processor on 15 April 2020. After gentle crushing, the juice was fermented with wild yeast in sweeping arm, stainless steel fermenters and kept on skins for one week to achieve a ideal fruit concentration and texture. The wine was matured in older French oak 500L puncheons for 18 months with two rounds of racking to add palate weight.
