2019 was a very hot and dry year with strong winds during flowering. This meant yields were low and fruit quality was high. We were sampling fruit regularly to ensure we were able to pick at peak flavour without letting the fruit over ripen.
The fruit was cold soaked for 24 hours prior to fermentation commencing, and then matured in one, two and three-year-old French oak puncheons for 9 months. This method allowed for a vivid expression of fruit with a subtle hint of oak.
