2020 was a warm vintage with low yields resulting in high quality fruit. The Sangiovese fruit for this wine was harvested during a cool morming in mid-March. We pick the Brunello clone of our Sangiovese to make the Rosé from. It has larger berries than our other M1 clone and therefore makes lighter, fruitier wine. The grapes are picked at lower sugar levels than a red table wine.
We processed this wine as a white to retain fruit forward flavours and delicate aromatics. This means that the grapes are crushed and have some contact with their skins until the rose colour and flavours are extracted. From there, the wine is fermented at cool temperatures in stainless steel tanks to preserve primary fruit flavours.
