2021 was a cooler vintage with lovely slow ripening, providing both good yields and excellent quality and flavour. Reduced bud numbers from strategic pruning, plus favourable vintage conditions gave us big bunches of plush Vermentino grapes. The fruit for this wine was picked during the cool of night to preserve the delicate varietal character of Vermentino.
The grapes were crushed and fermented in stainless steel between 12 - 15C, to help the delicate fruit flavours shine through. The wine was kept on lees for eight months post fermentation to add texture and complexity.
