Beef shin with mushrooms and shallots

Ingredients

1.5kg or 4 pieces of beef shin
2 tbls plain flour
1 tsp paprika
2 tbls olive oil
1 x 400g crushed tomatoes
200ml red wine
12 shallots, peeled
200g button mushrooms
1 clove garlic, finely chopped
1 carrot, diced
1 stick celery, diced
salt/pepper

Method

Preheat oven to 170°c. Combine flour and paprika and toss through beef to coat. Heat casserole dish over medium-high heat. Add 1 tbls of olive oil. Add meat and cook until browned. Remove. Add remaining oil, and all other ingredients and cook for 3 minutes. Add meat back to the dish. Press piece of baking paper over the top. Cover with lid and cook for 2 hours or until tender. Season with salt and pepper. Serve with your favourite mash potato recipe and a glass of Stone Dwellers Cabernet Sauvignon.
