Press out four quiche tins with puff pastry and blind bake in 170°C oven for 12-15 minutes, until lightly browned. Set aside.
Cheese filling: Place cheeses in food processor and mix them until smooth. Add the remaining ingredients and mix until all combined. Spread into prepared pastry cases and cook at 150°C for 15-18 minutes until mixture has set.
Serve with a salad of beetroot, broadbeans, lettuce and walnuts and a glass of Are you Game? Chardonnay!
