The Rule 2016 Shiraz

The Rule 2016 Shiraz is inky deep dark purple in colour. Immediately recognisable aromas of ripe berries, dark chocolate, clove and mocha leap from the glass, together with some vanilla from the French oak barrels. The palate is big with rich, ripe fruits, warmth, spice and some balanced sweet oak flavour.

The fruit for this Shiraz was picked during the first two weeks of March 2016, which is about two weeks earlier than normal. We used wild yeast to ferment this wine to enhance complexity and texture. The fruit was hand plunged in tiny, two tonne stainless steel, open pot fermenters to give more tannin extraction. The wine was split into individual parcels and matured for 15 months with the majority matured in new French oak barrels and a small amount in one-year old French barrels. The result is a well-balanced, complex yet fruit forward Shiraz with moderately supple tannins.
