This Chardonnay is pale straw in colour with complex aromas of summer stone fruits and honey toasted oak. A very sophisticated wine; light bodied, fresh and flinty.
The fruit for this wine was harvested during the day on the 31st March 2017. No crusher was used, the fruit was just pumped to the press. We chose to ferment this wine in barrel to add complexity and texture, and assist with the integration of oak flavours. This wine was fermented at 18-20°C, using the yeast strain QA-23 which promotes fresh, fruit-forward wines. This wine was then matured using a combination of 30% new and 70% old French oak barrels for 9 months.
