A vibrant Pinot Noir that glows cherry red. Complex savoury notes mingle with aromas that remind of forest walks and succulent red fruits. A young varietal wine that seduces the palate with subtle cherry and strawberry notes.

The fruit for this wine was harvested during the day in March. Fruit from H Block on the 14th and 15th March 2017 and J Block on the 23rd of March. The grapes were de-stemmed and crushed prior to fermentation. This wine was fermented in high tech sweep-arm fermenters to maximise colour and flavour. This wine was fermented at 20 - 30°C. We chose to use wild yeasts to promote a fuller bodied wine with great textural interest. This wine was then matured using two and three year old puncheons for nine months.
Served perfectly with Peking duck pancakes with a fresh plum sauce.
