The inviting salmon pink colour stems from the Sangiovese grapes from which this wine is made. Classic aromas of crushed strawberries and summer fruits lead to a fresh and fruit driven palate with a lovely crisp drive to finish.
The Sangiovese fruit for this wine was harvested late of February in 2017. We pick the Brunello clone of our Sangiovese to make Rosé. It has larger berries than our other M1 Sangiovese clone and therefore makes lighter, fruitier wine. The grapes are picked at lower sugar levels compared with a red table wine. The fruit is processed as a white to retain fruit forward flavours and delicate aromatics. That is, the grapes are crushed and have some contact with their skins until the Rosé colour and flavours are extracted. From there, the wine was fermented at around 16˚C in stainless steel tanks to preserve primary fruit flavours.
