Winemaking

The fruit for this wine was picked on the 19th March 2020 using a selective harvester. The juice was fermented using wild yeasts and carefully selected cultures which promote fruit and spice characters. For 12 – 18 months, parcels of this wine were matured in old French to provide complexity and contribute lovely vanillin notes. A dash of Cabernet Sauvignon was added to the final blend to provide a black cherry perfume lift and further structure on the palate.

Colour

Deep red with some purple hues.

Nose

Ripe dark plums, lifted lavender and florals meld with hints of sweet dark cherries and pepper spice

Palate

Juicy dark plum and blackberries underlined with hints of black olive and cool climate spice. Medium bodied, with lovely integrated oak, fine, dusty tannins and blackcurrant on the finish.
