This wine was fermented at 24˚C, using wild yeast to help build savoury complexity. The wine was matured for 12 months in French oak, with 65% coming from new barrels and 35% coming from barrels on their second fill, providing a softer tannin profile. This Shiraz was selected from the best five barrels of the best two batches of Upton Run Shiraz, it is the epitome of Shiraz from our great region.
