Winemaking
The Cabernet fruit was picked from our Upton Run vineyard towards the end of April, a little later than previous years. The juice was fermented in stainless steel with a specifically selected yeast to further promote varietal richness. The wine was matured with new French oak for an intensely aromatic profile yet a soft finish.
