Winemaking

The fruit for this wine was harvested at different times between the 16th March to 5th April 2023. After crushing, Riesling had a 24-hour skin contact, while the rest remained in cold soak. Fermented in stainless steel at 15-18°C to maintain freshness, the whites went through partial malolactic fermentation and three months of lees stirring for complexity. The resulting blend is bright, fresh and exciting.
