This is no Peppermint Pattie but it comes close, bringing a now-distinctive LWSTL peppery elegance to the glass. Wild ferments can be unpredictable, but this is a mighty strong follow-up to 2020 with a similar high level of intensity: black pepper, acacia, five-spice, licorice, black fruits and spice rolling long, clean and bright across the tongue. Tannins, supple and well-crafted, sit back in readiness for time in bottle – it can easily take 10 years – and they are girded for the journey.

This wine was fermented using wild yeast, with its slightly unpredictable nature, this builds more complexity in the wine. Matured for 12 months in older oak using 130-year-old English oak casks.
