Winemaking

This fruit was picked using a selective harvester in April 2022. The whole berries were crushed with the rollers left open to ensure only partial crushing of the fruit, resulting in optimal extraction of colour, tannin and flavour from the skins. The juice was fermented with yeast to promote mid-palate and intensity of fruit aromas. The wine was then matured in old American oak for 11 months for added concentration.

Perfumed bright red fruits and plum, with hints of white pepper and dried oregano

Palate

Fresh red fruits on entry. Medium bodied with a super silky mouthfeel and a core of dark fruits, hint of dark chocolate and spice with chalky fine tannins running long.
