Winemaking

The fruit for this wine was fermented in stainless steel tanks to preserve the primary fruit flavours. The wine is an unprecedented style using largely Vermentino as the sparkling base. When picked early, Vermentino provides fresh and light apple characters which work brilliantly in creating a crisp Sparkling wine. The Chardonnay adds extra complexity to this unique Sparkling wine.
