This fruit was harvested using a selective processor in mid-March 2022, from the HA block at Billisvineyard and block 3 at Upton Run vineyard in the Strathbogie Ranges. The fruit was cold soaked for four days, then the juice was wild fermented in stainless steel providing complexity and texture. The wine was matured for 12 months in predominantly older French Oak 500L puncheons.
