Winemaking

The Gamay was handpicked, sorted and destemmed to ensure quality. 20% of whole berries were kept and added to the top of the stainless-steel fermenter. The wine was left on skins for a total of 14 days for adding complexity, but no oak was used, rather the wine maturing in the stainless-steel vessel.
