The Pinot Noir fruit was picked using a selective process harvester, carefully crushed and then quickly pressed with minimal skin contact to help produce the Rosé colour. The Pinot Noir and Riesling were fermented separately stainless steel takes with selective yeast to retain varietal characters and freshness.
