Winemaking

This fruit was picked using a selective harvester in April 2024. The whole berries were crushed with the rollers left open to ensure only partial crushing of the fruit, resulting in optimal colour and tannin extraction. A specific yeast originating from Spain to promote structure and mouthfeel. The wine was matured for l l months in old French oak for concentration.

Nose

Perfumed bright red fruits, licorice with subtle hint of black pepper and wild herbs.

Palate

Intense red fruits on entry. A core of dark fruits, hint of dark chocolate and spice. Medium bodied with a super silky mouthfeel with chalky fine tannins for an enduring finish.
