Winemaking

Winemaking

The fruit for this wine was harvested using a selective processor in early to mid-April 2021, from our Upton Run block. After crushing gently, the juice was wild fermented in stainless steel to stabilise and integrate natural flavours, then matured in French oak for 18 months to add delicate oak aromas. A dash of Merlot (9.52%) was added to the final blend to add some dark berry characters.
