Winemaking
The Sangiovese fruit was picked from our Upton Run vineyard by selective harvester on the 16th of March. Whole berries were used to crush to promote aromatics and fragrance. Fermentation then occurred in stainless steel to preserve primary fruit characters. The wine was then matured for 12 months in old French oak.
